Rockfish Plymouth Anchovies in Olive Oil

Whole anchovies, hand-preserved in olive oil from a rare autumn a catch landed at Plymouth. Rockfish is based in Devon and Dorset, whose fish travel about 17 metres from the boat to their own fishmonger unit on the Brixham quayside, portioned and vacuum-packed the same day they're landed, with every catch traceable back to the boat that caught it. The anchovies are preserved whole, skin on, in olive oil and salt. These anchovies are firm, lightly oily, and naturally sweet, with the beautiful tin itself illustrated by artist Anna Koska.
