Nice Cans Sardines in Tomato and Peppers

Nice Cans was founded by Charlotte Langley, a classically trained chef, to make tinned sardines feel like a treat rather than a store-cupboard afterthought. The sardines are wild-caught in the Portuguese north-east Atlantic and canned in Portugal. Here they're packed in olive oil with peperonata, a mix of peppers, tomato, onion, oregano and garlic sharpened with a little vinegar. The peppers add sweetness and the vinegar a bright tang, so the tin eats more like a finished dish than a plain sardine.
