Nice Cans Sardines with Rosemary and Fennel

Nice Cans was founded by Charlotte Langley, a classically trained chef, to make tinned sardines feel like a treat rather than a store-cupboard afterthought. The sardines are wild-caught in the Portuguese north-east Atlantic and canned in Portugal. Here they're packed in olive oil with rosemary, fennel seeds and black pepper. Rosemary leads, the fennel adds a sweet aniseed note and the pepper a gentle warmth, and the herby oil doubles as a ready-made dressing.
