Santa Catarina Tuna Fillets in Mediterranean Sauce

Tuna caught by pole and line in the Azores and canned on the island of São Jorge by Santa Catarina. Every fish is traceable from the small boat that caught it to the moment it's canned. The fillets come in olive oil with a Mediterranean sauce, a mix of onion, red pepper, garlic, paprika and parsley with cider vinegar and a little chilli. It adds sharpness, sweetness and a gentle heat to the firm, meaty tuna, so the tin works as a ready-made dressing.
