Tuna caught by pole and line in the Azores and canned on the island of São Jorge by Santa Catarina. Every fish is traceable from the small boat that caught it to the moment it's canned. The fillets are packed in olive oil with fennel seeds, which add a sweet, gently aniseed note that lifts the tuna without overpowering it. Firm, meaty fillets that flake into large pieces.
