Papa Anzóis Smoked Sardines

Smoked sardines packed in virgin olive oil by Papa Anzóis, made by Conserveira do Arade in the Algarve, Portugal. The cannery was founded in 2015 on the banks of the river Arade, where a small team cans fish caught off the Algarve coast by hand, dehydrating the fish rather than steaming it before it goes in the tin. The smoke gives the sardines a savoury flavour that works well with the richness of the oil, with salt being the only other addition. Serve on toast or flake through a salad.
