Hevva! Cotswold Trout with Dill

Hevva! sources trout inland from Cotswold waters, a rarer, freshwater addition to the tinned fish shelf. The trout is farmed sustainably in spring-fed water, hand-filleted at the farm, then packed with rapeseed oil, lemon, white wine and dill. Hevva! takes its name from the cry once raised on the Cornish coast when a shoal of pilchards was sighted, signalling fishermen to launch their boats. The tins themselves are still prepared by hand at the cannery in Bude, Cornwall.
