Hevva! Cornish Monkfish with Aleppo Pepper

Monkfish is meatier than most fish. Hevva! finishes it with Aleppo pepper, for a milder, fruitier warmth. The monkfish comes from early-morning auctions in Newlyn, then is pan-fried in a garam masala crust before being preserved in coconut oil with lime and Aleppo chilli, prepared at Hevva!'s cannery in Bude, Cornwall. Hevva! takes its name from the cry once raised on the Cornish coast when a shoal of pilchards was sighted, signalling fishermen to launch their boats.
