Hevva! in Cornwall prepare their catch within hours of landing, hand-packing everything from Cornish sardines to freshwater Cotswold trout, proof that the tinned fish tradition isn't only a Portuguese or Spanish one. Rockfish land their fish in Plymouth before freezing and sending them to specialised canneries in Spain and Portugal, where skilled artisans cook, and pack the fish using traditional conservas methods in local olive oil.
