Quick and Easy Tinned Sardine Toast with Mustard

This one’s a super quick one, perfect for a rushed lunch when you need to eat quickly but still want it to be healthy and packed full of flavour.

There’s not much to it, you’re relying on good bread, great sardines, good mustard, and then a few toppings (feel free to switch it out).

Ingredients

  • 1 large slice of sourdough bread
  • Butter
  • 2 teaspoons of dijon or wholegrain mustard
  • 1 tin of sardines in olive oil (we love Ati Manel Spiced sardines for this)
  • 1 small shallot, very finely diced (you can replace with red onion)
  • Small handful of flat-leaf parsley, chopped
  • 1/3 of a lemon (for the juice)
  • Flaky sea salt
  • Fresh cracked black pepper
  • Extra virgin olive oil

Method

  • Slice the bread into thick slices and throw it in the toaster until nicely browned
  • In the meantime, very finely dice the shallots or red onion, and chop the parsley
  • When the toast is ready, spread a layer of butter on it
  • Follow this with a very generous layer of mustard (trust us when we say it can take more than you expect, but adjust to taste)
  • Crack open the tin of sardines, and place these onto the toast
  • Top with the diced shallot and parsley
  • Add a good squeeze of lemon juice, sprinkle of flaky sea salt a few twists of black pepper
  • Finish it up with a drizzle of good extra virgin olive oil
